Aaron Moffatt died in hospital on February 3, 2018 after being transferred from the Sarnia Jail on January 22.
An inquest examining the events surrounding his death is mandatory under the Coroners Act since Moffatt was in custody at the time.
The inquest, which began Monday, will hear from a total of 11 witnesses over five days.
The five-person jury may then make recommendations aimed at preventing similar deaths.
