It's called "liquid gold."
You can see first hand how maple syrup is produced from start to finish at the A.W. Campbell Maple Syrup festival March 17 and 18.
Admission to the Conservation Area is $5 per car from 10am until 3pm Saturday and Sunday.
Spokesperson Sharon Nethercott says the festival has been running for over 40 years.
"We are looking at historical interpretation of how maple sap was first discovered in the trees by the First Nation's, and we follow through to the early pioneer methods. So it's looking at the beginning and roots of maple sap."
Hands-on displays will be set up with horse-drawn wagon rides from 11am until 2pm.
The Alvinston Firefighter's Association will serving up pancake and sausage meals at the Alvinston Community Centre.
The Conservation Area is on Shiloh Line, three km. north-east of Alvinston off Nauvoo Rd.
