Innovative Food Production Recognized

A Chatham-Kent farming and vegetable packing company is being recognized for it's innovative process that includes harvesting fresh carrots in the spring.

Chatham-Kent Chamber of Commerce Industry of the Month honours go to Natures Finest Produce in Pain Court.

Head of farming operations Kevin Stollaert says protecting the carrots in the ground over the winter actually improves their quality.

"We cover them with straw and harvest them in the spring which allows the sugars in the carrot tops to transfer into the carrot itself and make them sweeter," he says. "We sell them in the spring as a super sweet carrot."

Stollaert says they use enough straw that the ground does not freeze, and the carrots keep well in their natural environment.

The farm grows 1,500 acres of carrots, 500 acres of onions and has a total of 4,000 acres.
