Elmira Firm Expanding Innovative Ideas For Vegetables

First it was apple chips.

Now, Martin's Family Fruit Farm in Elmira is getting into slicing and dehydrating fresh vegetables into chips.

The federal government is investing over 700 thousand dollars in the project.

Martins will develop and pilot test drying on four vegetables for those chips - sweet potatoes, potatoes, carrots and tomatoes.

The Elmira company had previously received 1 point 4 million dollars from Ottawa to help create a new processing line for apple crisps and cider.

That money was also to support the commercialization of apple chips as a new snack food.

President Kevin Martin says the latest project could help launch a new line of all natural, healthy snacks, expanding Martin's current product offering.

Government officials also expect it will help create jobs and increase demand for local vegetables.
